Vindaloo Curry

  • 1kg Cubed pork
  • 1tsp Teja garlic powder
  • 1tsp Teja turmeric
  • 1 Teja cinnamon stick
  • 3 Onion, chopped
  • 1/2c Vinegar
  • 1 tsp Salt
  • Few green chillies (opt.)
  • Few Teja dried whole chillies
  • 1 tsp Teja ground ginger
  • 1 tsp Teja mustard seed
  • 4 Teja whole cloves
  • 4 Teja green cardamon whole
  • 1tbsp Tamarind
  • 1c Coconut milk
  • 2tbsp Oil


Combine the following spices: cumin, turmeric, cinnamon, mustard seed, cloves, cardamom, ground ginger, garlic powder and whole red chillies. Coat the cubed pork and refrigerate overnight. Soak tamarind in vinegar and strain the pulp. Saute Chopped onion until golden brown, then add the marinated pork, coconut milk and salt. Simmer until pork is well cooked. Add tamarind pulp, simmer for another 10 mins. Add a few green chillies(optional). Serve over basmati rice. Garnish with fresh chopped coriander leaves. Serves 8-10.
